Eating local...

I try to plan one meal completely from our garden once a week, more if our plants are yielding lots! Tonight we had this to work with...new potatoes, a massive courgette, tomatoes, eggs and beans.



I used the tomatoes and beans to make a spicy bean dish...



Zucchini and parmesan (ok, not local) fritters...



Served with boiled new potatoes.



Delicious.

That looks yummy...that one egg sure had a rough shell on it are your chickens just starting to lay.

We have one new layer, the others have got it down pat. We are pretty sure that that egg comes from our oldest girl as she lays only about 3 times a week and that is when we get crinkly eggs.

How wonderful! I love your large variety of ingredients, all natural and organic, that filled your plate with delicious and colourful food! Yum!

We also had a veggie meal that had at least 5 different veggies from our garden. I'm always so grateful to the Lord for meals like that!
